Beef Chimichurri Sauce

Combine:

  • 1/4 cup olive oil
  • 1/4 cup red-wine vinegar
  • 1/4 cup finely chopped onion
  • 2 tablespoons minced red bell pepper
  • 1 1/2 teaspoons of minced garlic
  • 2 tablespoons chopped flat-leaf parsley
  • 1 1/2 teaspoons oregano leaves
  • 1/4 teaspoon hot red-pepper flakes
  • 1 fresh bay leaf (optional), finely chopped

Refrigerate marinating beef for at least four hours to bring out the fullest flavours. When it comes to marinating, remember: don’t hurry the chimichurri!
